Mini Crab Cakes

Ingredients

Crab Meat
1 Egg
Panko Crumbs
Dijon Mustard
Mayo
Seasonings (Old Bay, Black Pepper, Parsley)
Lemon
Butter

Whisk all ingredients together except crab meat, panko crumbs, & butter

Gently fold in the panko crumbs first, then repeat the same step with the crab meat
be sure to add each separately

Preheat oven to 350 degrees; gently scoop mixture into balls and place on a buttered baking sheet
Do not flatten

Place in fridge covered with plastic wrap for 15 minutes; then bake until golden brown

Pair w/ lemon slices
